Eggplant Lasagna for comfort food

Comfort Food, just the name conjures images of home and hearth.  The heart of the family. The center. One of the comfort food in my family, as I raised my own, family, was Lasagna.  Even today a hot pan of lasagna pulls the whole family to the table.  With a ketogenic diet pasta is not part of your normal eating routine.  So I have adapted it to bring the feel and taste of lasagna back to our table, our home, our center.   Eggplant Lasagna 6 servings 1 medium sized eggplant, thinly sliced 1 LB Italian sausage, browned, may use hot if preferred 8 oz of ricotta 1 C low carb pasta sauce, I use Ravarino 1 C or more mozzarella minced garlic melted butter I used a 7 1/2" w x11 1/2" L x 1 1/2" D pan. Lightly greased. Preheated oven to 375 F Thinly slice lengthwise your eggplant. place one layer of eggplant in bottom of the pan. Spread half of ricotta over this. Then half of sausage.
